banana bread blondies
one bowl banana bread blondies — a beautiful pairing of two of my favorite baked goods. and believe me when i tell you, they’re insane. also - i’m VERY SLOWLY entering my baking era. aka i’m not that good at it yet. aka these are so easy to make!
ingredients//
2 bananas, mashed
1 1/4 cup flour
1/2c cornmeal, ground
2 eggs, 1 egg yolk
1/2c coconut sugar (brown sugar works too!!!)
1/4c maple syrup
2 tbsp unsalted browned butter (
always)
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp salt
1 cup chocolate
1 cup walnuts (
is the best)
method//
preheat oven to 350 and line an 8x8 baking pan with tinfoil. coat generously with butter.
brown your butter by adding butter to a pan on medium heat and heating it until there’s brown bits at the bottom. remove from heat and let cool. next, mash your bananas in a bowl. add eggs, coconut sugar and maple syrup. mix until incorporated. add browned butter and vanilla extract. mix. to the same bowl, add flour, cornmeal (mine was coarse so i ground it down a bit!), baking powder and salt. whisk until the entire mixture is smooth. then, fold in chopped walnuts and chocolate. don’t overmix the dough! add to your baking dish and bake for 25-35 minutes, until a toothpick comes out clean. cool and enjoy!
