Salmon & Coconut Thai curry

Ingredients (serves 4):
🔸 4 salmon fillets (season with salt, pepper & 1tsp paprika)
🔸 1tbsp coconut oil
🔸 2 shallots
🔸 3tsp minced garlic
🔸 1tsp minced ginger
🔸 spices: 1tsp paprika, 1tsp ground cumin, 1/2tsp ground coriander
🔸 3tbsp Thai red curry paste (I used
)
🔸 1tbsp tomato paste
🔸 1 head of green pak choi (bok choy)
🔸 1 red bell pepper
🔸 400ml tin of coconut milk
🔸 salt (to taste)
🔸 optional: Thai Basil/ regular basil & lime juice for garnishing
Instructions:
1️⃣ Heat the coconut oil in a large pan, season the salmon with salt, pepper & paprika and fry on med heat (skin side up) for 4 mins (don’t move them around!) Flip & fry for another 3 mins on med/high heat, then remove & set aside
2️⃣ In the same pan, fry the shallots for a couple mins, then add garlic, ginger & the spices and stir

Instructions
Step 1
Chop up all the veggies.
Heat the coconut oil in a large pan, season the salmon with salt, pepper & 1 tbsp of paprika powder and fry on med heat (skin side up) for 4 mins (don’t move them around!) Flip & fry for another 3 mins on med/high heat, then remove & set aside
Step 2
In the same pan, fry the shallots for a couple mins, then add garlic, ginger & the rest of the spices and stir
Step 3
add Thai red curry paste and tomato concentrate
Step 4
add bell peppers and pak choi
Step 5
add coconut milk
Step 6
add salmon and re-heat for a couple of minutes without lid
