Instructions

Step 1
Whisp together egg yalk and milk, than add sifted flour, baking powder and vanilla sugar
Step 2
Beat egg whites to soft peaks with an electric whisk. Gradually add sugar while whisking. Whip to a stiff meringue
Step 3
Heat a large non-stick frying pan or griddle over medium heat. Carefully fold the meringue into the egg yolk mixture, preferably in pools and do not stir too much. The batter should be extra airy
Step 4
Grease the pan well with butter and place spoonfuls of batter in the pan to make small but airy pancakes, 8-10 cm in diameter. Top with more batter later so that you build the pancakes as high as possible, without them becoming larger in diameter
Step 5
Turn when the underside is golden (3-4 minutes), put on a lid and let them finish cooking until golden and set (4-6 minutes
