Instructions

Step 1
Preheat oven 375Β°. To a sheet pan lined with parchment paper, add your vegetables, roughly chopped, toss with oil and roast for about 20 to 30 minutes. Add spices and roast for another 5 to 8 minutes. Cool vegetables then add to blender along with water and bouillon. Blend smooth. Get a dutch oven or soup pot on medium heat, add carrot mixture and bring to a light simmer. Optional but taste delicious. Add 2 tablespoons of sour cream and 1 tbsp of your favorite hot sauce stir and lid. Allow to simmer for 10 to 20 minutes. Serve with drizzled olive oil and more hot sauce or with shaved Parmesan and hot sauce. Enjoy!
