Vegan tuna from melon

Veganuary day 27: Watermelon tuna. Follow for 31 days of new recipes this veganuary! I was first introduced to this recipe when I saw my mate turn melon into tuna like a magician and it’s really one of those vegan recipes you can make easily at home that will blow your mind. To make, you need: 1 watermelon 3tbsp soy sauce 1tbsp rice wine vinegar 1tbsp sesame oil 1tsp minced ginger 1tsp mince garlic 1 sheet of nori, cut up To serve: Rice Sesame oil Sesame seeds Green onion -cut your watermelon up into steak sized chunks -make your marinade in a large dish -add the watermelon to the marinade and leave to marinate, the longer the better but I recommend at least an hour -put it in the oven at 180c and cook for 40mins to an hour, turning the steaks halfway -once cooked, sear using a cast iron pan or on the BBQ if you fancy -serve over sushi rice with sesame oil, sesame seeds and green onion
