Instructions

Step 1
Drain and rinse the canned chickpeas and place them in a blender, add the drained roasted red peppers, lemon juice, garlic, cumin (paprika or cayenne pepper, optional), salt, pepper and olive oil, and blend until smooth. (You'll need to scrape down the sides of the blender). If the chickpeas mixture feel too dry, you can add a tablespoon or so of the roasted pepper liquid, olive oil, or water, one at a time, to loosen them.
Step 2
Mix until you get a thick, smooth hummus according to the desired consistency, distribute the hummus with red pepper among the serving bowls, using the back of a spoon, make a well in the center of each bowl, drizzle olive oil over the hummus, and garnish with boiled chickpeas, cayenne pepper, chopped parsley and enjoy.
