Instructions
Step 1
Thinly slice the beef across the grain. Place into a bowl. Add half the oil. Add half the hoi sin sauce and stir to coat.
Step 2
Spoon sesame seeds into a cold wok. Place over medium to high heat, cook, stirring for 4 minutes until sesame seeds are golden. Remove to a small bowl.
Step 3
Return the wok over high heat until hot. Add the beef and stir fry 1 minute until sealed, remove to a plate.
Step 4
Reduce heat to medium-high. Add the remaining half of oil with the beans, snowpeas, carrot, onions and mushrooms. Stir fry 2 minutes. Add 1 tablespoon of water, cover wok and wait 1 minute. Remove the lid and add cabbage. Return the beef and any juices. Add the remaining hoi sin sauce, stir fry for 1 minute until cabbage is wilted. Remove from the heat, sprinkle over sesame seeds and serve.
Step 5
TIP: Peanut oil, olive oil or rice bran oil are best suited for stir frying over high heat as they are able to reach higher a temperature without burning.
