Instructions
Step 1
Steam cauliflower. I put it in my rice cooker.
Step 2
Wash, dry, and poke holes in the potatoes using a fork. Put on a greased baking sheet. I put in my toaster oven at 425 for 40 minutes, or until a fork goes in easily
Step 3
Put cauliflower in a pot on the stove. Mash potatoes with a fork lightly as you add them to the pot.
Step 4
Add chicken broth and almond milk. Bring to a bowl.
Step 5
Crush to desired texture with a potato masher, whisk, or use an immersion blender
Step 6
Add scallions and seasonings to taste
Step 7
Top with scallions and cheese
