Ingredients

1 Tbspolive oil
2onions
finely diced
4garlic cloves
sliced
4green onions
roughly chopped
200 gramskimchi
can of chickpeas
soy sauce
to taste
Can kidney beans
300 gramspotatoes
cut into bite-sized pieces
salt
to taste
1 Tbspgochujang
1 Tbspsmoked paprika
1 Tbspred pepper flakes
200 gramsoyster mushrooms
shredded by hand
1mushroom boullion cube
water
to cover
Instructions
Step 1
In a large dutch oven heat up some oil on medium heat.
Step 2
Add your onions, garlic, and green onions. Stir fry for 7-8 minutes until the onion is soft and fragrant.
Step 3
Add a can of chickpeas, followed by your kimchi, salt, smoked paprika, red pepper flakes, gochujang and soy sauce. Mix that until incorporated.
Step 4
Add a can of beans, the shredded mushrooms and the chopped potatoes. Stir fry until combined
Step 5
Cover with water and add a mushroom boullion cube. Mix and let simmer for about 30 minutes covered with a lid.
Step 6
Adjust for salt and serve over rice, or don’t, i’m not your boss.
