Udon Noodles and Pak Choi Stir Fry (Vegan)

Some of the ingredients in this recipe may be a bit more exotic than those in most HighSatiety diet recipes, however they should all be easy to find in your local supermarket. This taste of the Orient, low energy dense vegan dish is very cheap and easy to put together and makes a great lunch or light dinner. Double the ingredients for four portions and remove the sriracha if you prefer less spice.

Step 1
Grate the ginger and slice the spring onions and garlic. Add a tablespoon of olive oil to a large frying pan or wok over high heat and fry the ginger, onions, garlic, mushrooms and sesame seeds for 5 minutes. In a small bowl mix three tablespoons of soy sauce, a tablespoon of water and a teaspoon of sriracha. Reduce the pan heat to medium then add this sauce and the washed pak choi. Cook for 5 minutes until the Pak Choi has wilted. Drain the udon noodles in warm water in a colander until they have separated and then also add them to the pan. Mix well and cook for a further 5 minutes. Serve. Suggested servings: Two.
