Instructions

Step 1
Season pork in a bowl, mix vigorously until the meat takes on a sticky, paste-like texture, and leave for 30 mins.

shiaoxing wineshiaoxing wine2 Tbsp
fine sea saltfine sea salt2 ¼ tsp
sugarsugar2 ¼ tsp
cornstarchcornstarch1 ½ tsp

baking sodabaking soda
Step 2
Pour the mustard greens into a large bowl and cover with water, and wait for 30 kinutes until rehydrated
Step 3
Scoop the mustard greens into a fine mesh colander to drain. Pour off the water, if there is sand at the bottom then repeat rinsing.

Roughly chop the mustard greens, and mix with ingredients.
Step 5
Combine mustard greens with pork. Make into tiny balls to steam.
Step 6
Steam for ~10 mins, with the baby peas
