Instructions
Step 1
Slice onion into thin slices and then break them into pieces. (you can do this by cutting it in half, then slicing along the length of the onion half repeating it until it's all in slices. Each chunk should then break into strips when you pull it apart)
Step 2
Start boiling some water. Once it's boiled add in your beef. If you've got too much beef you can go in batches.
Step 3
Boil the beef for just enough time for the foam to come out and it turning a bit grey (~15-30s) then transfer the beef to the side. If you are putting in a frozen pack of beef, jiggle it around so it separates. We don't want to fully cook it through, just enough to darken and soften it.
Step 4
Add vegetable oil to your wok or pan and cook the onions on medium heat until they turn translucent.
Step 5
Next add your beef in and mix.
Step 6
Add 1.5 tbsp of cooking wine (or just eyeball a good splash, this part doesn't need to be exact since we cook off the alcohol) and mix
Step 7
Add in enough soy sauce til the mix start looking a bit darker (~1/3 cup). If not salty enough add more later.
Step 8
If you want the sauce to be a bit more saucy add a bit of water (1/3 cup). This is optional and just added based on how dry the mix looks.
Step 9
Add 2 tbsp of sugar. Keep mixing.
Step 10
The colour should be dark like this now. You're done!
