Instructions

Step 1
Mix eggs, egg whites, cottage cheese, and seasonings well. Grease a 13x9x2 pan. Cook at 400° for 30 minutes.
Step 2
While eggs are cooking, toast english muffins and build sandwiches with Canadian bacon and cheddar.
Step 3
Once eggs are done, cut into 8 squares, add one square to each sandwich, wrap in a paper towel and store in fridge 5-7 days.
