Fried Anchovies (Cá cơm rang)

This is one of my favourite side dishes to eat with rice. I learnt this recipe from my mom, and now you can learn it from me. If you want something rich in taste but simple in preparation, this is for you. It adds the right amount of savoury, sweet, and spicy in every bite. It also lasts long in the fridge, so you can make a bigger portion for the days that you are lazy to cook.

Instructions
Step 1
Take out two hands full of dried anchovies (you can change the portion accordingly)

Soak them in water for 30 minutes

Mince two to three cloves of garlic

Add two to three tablespoons of fish sauce (or soy sauce) in a bowl

Add equal amount of water

Add a tablespoon and a half of sugar

Add a freshly chopped chili or chili flakes in the same bowl (you can add less if you don't like it spicy)

Squeeze in a wedge (one tablespoon) of lime (or lemon)

Mix the sauce until the sugar dissolve

Add the sauce to a pan on low heat, stirring frequently

Until it began to thicken, turn off and remove it from the pan

After 30 minutes, rinse, drain the fish and let it dry for 15 minutes

Pour a bit of oil into the same pan

Fry the garlic until fragrant

Add in the anchovies, fry them until opaque

Don't fry for too long or it would dry out the fish

Turn to medium to low heat, add in the sauce

Stir constantly to not burn the fish

It's done when the sauce fully thickened and mostly evaporated
