Instructions
Step 1
Ingredients: Gather the ingredients, including lentils, vegetables (such as onions, carrots, tomato, garlic), cumin, bay leaves, pepper, chicken bouillon powder, and water.
Step 2
Prepare Ingredients: Rinse the lentils thoroughly and chop the vegetables finely. Mince the garlic and chop the cilantro.
Step 3
Saute Aromatics: In a large pot, heat some oil over medium heat. Add chopped white onions, green onions, carrots, tomato, and garlic. Saute until softened and fragrant.
Step 4
Add Lentils and Liquid: Add the lentils to the pot along with bay leaves, cumin, pepper, chicken bouillon , and water. Bring to a boil.
Step 5
Simmer: Reduce the heat to low, cover the pot, and let the soup simmer for about 45 minutes or until the lentils are tender.
Step 6
Season: Adjust any other seasonings as desired. If lentils have evaporated most of the broth then add a cup or two of water to pot.
Step 7
Serve: Remove the bay leaves from the soup and garnish with chopped cilantro. Serve hot, optionally with a squeeze of lime juice on top.
