Instructions
Step 1
Preheat over 160 degrees
Step 2
Place corn, spinach, banana and oil in a blender until perfectly smooth
Step 3
Place flour and baking powder in a bowl and whisk.
Step 4
Pour wet ingredients into dry ingredients, mix in as few moves as possible. Add egg and mix
Step 5
Pour into mini muffin tray 12-18 muffins
Bake for 12 minutes
Step 6
Leave to cool
Before removing from muffin tray
