Step 1
Add oil to a hot work then add in the diced carrots and fry for about 3 minutes on medium heat

Push the carrots to the side of the wok then add in the eggs and break them up . Try to cook them so you have white and yellow bits . Cook for a minute then push the egg to the side with the carrot

Add in the frozen peas and cook for one minute then add in the cooked rice ( the rice should have been previously cooked and let cool as it will otherwise stick to the pan ) now add dark soy light soy and white pepper and heat the rice through .

Step 4
Take the rice off the pan add a few drops of toasted sesame oil then serve . I like to garnish with spring onions . Enjoy
