This is the summer salad of dreams. Garlic green beans with a sweet & salty salad topper seeds (which would be great on any salad) - with torn mozzarella on top. Yum yum!
400g extra fine green beans
4 garlic cloves, finely chopped
3 x 30g of a chosen seed/nut - you need 90g total. We did 30g each of chopped pistachio, sunflower seeds and pumpkin seeds
1 tbsp maple syrup
1 ball of mozzarella (burrata would also be good)
1 large red chilli - for garnish
Balsamic vinegar
Extra virgin olive oil
Salt
Pepper
1. In a small bowl, add all the seeds you've chosen, along with the maple syrup, 1 tbsp olive oil, a good pinch of salt and 1 tsp smoked paprika. Mix well then tip onto a baking tray lined with parchment. Smooth into one layer but don't separate the seeds out too much, you want it to remain as one sheet.
2. Bake in a 190c oven for around 10 minutes. Remove and allow to cool slightly for it to fully crisp. Snap most of the sheet into shards but crumble some up so it is slightly finer.
3. Trim the ends of the beans carefully and wash. Get a large frying pan on to heat over medium-high heat. Add a drizzle of olive oil and all the beans. Sauté for around 7 minutes or until starting to char in places and starting to soften. Then add all the chopped garlic and a good pinch of salt and cook for a few more minutes to cook the garlic without burning it.
4. Tip the beans on to the plate, tear over the mozzarella and top with the seeds. Slice the chilli and garnish, along with a drizzle of olive oil and balsamic vinegar. Cover with a good crack of black pepper and enjoy!
