Instructions
Step 1
Place the oven rack one step closer to the top, but not directly below the broiler. Set oven to 400 degrees F.
Step 2
Brown the meat. Add in the taco seasoning and cook according to package instructions.
Step 3
Lay out 8 corn tortillas on a cookie sheet. For a medium-sized pan, cook 8 at a time. You can do more or less depending on pan size; cook time will not change.
Step 4
Evenly sprinkle cheddar cheese over each tortilla.
Step 5
Place 1 Tbsp. ground beef on half of each tortilla.
Step 6
Without closing the tortillas, place the pan in the oven for 2 minutes to allow the cheese to melt.
Step 7
Remove them from the oven, and using a spatula, fold each taco in half. Give them a little press. Lightly spray each with avocado oil spray.
Step 8
Place back in the oven for another 10 minutes, flipping halfway. Tacos should be brown and crispy on both sides.
