Step 1
Add all ingredients to a blender except the coconut oil and berries. Blend until smooth
Step 2
Warm the coconut oil in a large pan. Make sure the pan is coated with oil then add small circles of batter to the pan (approx 1/8 cup), ensuring space between pancakes. Sprinkle with berries.
Step 3
Cook low and slow until edges start to crisp up, approx. 3 min. Then flip and cook for another 3 min.
Step 4
Repeat until batter is gone.
