Step 1
Make 1 C jasmine rice in rice cooker with 2 crushed cloves garlic. Allow rice to cool by putting in a large bowl and spreading it out.
Separate whites from 3 eggs and add whole 4th egg to the egg whites. Season both whites and yolks with fresh pepper. Add a dash of garlic salt to and scramble whites to incorporate the one yolk. Slice scallions, put white parts and green parts in separate bowls.
Smash and dice 4 cloves garlic. Add the 3 yolks to the cooled rice and mix until all grains are coated with egg yolk Slice sausages long ways then crossways into 1/4" pieces
Step 2
Heat wok. When hot add 2 tbsp oil, swirl to distribute and pour in scrambled egg whites+ the one yolk. Cook, folding and turning until just under done. Remove to plate on side.
Step 3

Clean any stuck egg and reheat wok. Add 1 tbsp oil to hot wok and dump in sliced sausage. Toss and stir until outside is cooked...3-4 minutes. Using slotted spoon, remove to plate with egg, leave oil and rendered fat behind.
Step 4

Put chopped garlic and white part of onions into hot oil. Let cook 10-20 seconds and dump rice in to oil and toss to mix. Stir fry rice until grains are separated and not sticking together when tossed. Add 1/4 tsp. MSG, toss thoroughly. add cooking wine, toss thoroughly
Step 5
Add dark soy, oyster, and fish sauce and mix thoroughly, stir fry rice another couple minutes. Add back egg, sausage and add green part of scallion and toss and mix thoroughly until incorporated and the egg is distributed evenly. Serve and enjoy.
