Instructions

Step 1
Add butter to a small skillet over medium high heat. Once melted, add in the chopped mushrooms and sauté them for 5 minutes until golden.
Step 2
Add the onions and garlic to the skillet and saute for another 3 minutes until the garlic is fragrant and onion begins to turn translucent
Step 3
Toss in the diced tomato, kale, cumin, and salt and pepper to taste. Cook for 3 more minutes.
Step 4
Crack the egg into the center of the pan and cook for 2 minutes over medium heat. Flip and cook for another 1-2 minutes.
Step 5
Serve with your favorite bread
