Heat up a large pan

Chop and saute onions

Chop and mix in the eggplant

Let cook down for 10 mins - or until the eggplant is soft

Cover and let simmer for 5 - 10 mins

Add paprika, cumin, and chili flakes

Make divots for the eggs in the veggie mixture

Crack eggs into divots, and cover for another 5 minutes on low heat

Top with cheese and parsley
Step 11
Serve with pita
