Zest and juice the lime

Peel and grate the ginger and garlic

Finely slice the spring onions

Roughly chop the coriander

Preheat the grill to its highest setting

Cook the rice according to the packet instructions

Combine all the ingredients, except the coriander and rice, in a large roasting tin, in a single layer

Place the tin on the highest shelf of the grill for 5 minutes until the prawns are evenly pink and cooked

Serve the rice with the prawns, and scattered with the coriander
