Step 1
Soak the glass noodles in warm water for about an hour.
Step 2
Making the sauce: In a bowl, add 4 tablespoons soy sauce, 2 tablespoons of sugar, 1 tablespoon of minced garlic, 2 tablespoons of cooking oil, 4 tablespoons of water, 2 tablespoons of oligosaccharide or corn syrup, and a bit of pepper. Mix well.
Step 3
Slice yellow bell pepper, red bell pepper, onion, carrot, and shiitake mushrooms thinly.
Step 4
Thinly slice the pork and cut into long strips.
Step 5
Stir-frying: Heat 2 tablespoons of oil, add vegetables and mushrooms, and stir-fry on high until onions are translucent. Transfer to a plate to cool.
Step 6
Add soaked glass noodles and soy sauce mixture to the pan. Put sliced pork and stir-fry until the sauce reduces and pork is cooked. Add spinach and cook briefly. Return the vegetables to the pan, drizzle with 1 tablespoon of sesame oil, sprinkle 1 tablespoon of sesame seeds, and mix well. Easy and delicious Japchae is done!
