Instructions
Step 1
1) Soak the glass noodles in water and set them aside (I also put dried shiitake mushrooms in water, but this is optional. You can use mushrooms of your choice).

2) Cut the pork meat into thin strips. Transfer them into a bowl and marinate with 2 tbsp soy sauce, 1 tbsp brown sugar, 1/2 crushed garlic, and 1 tsp ginger. Set it aside.
Step 3
3) Prepare the veggies. Cut carrot and scallions into thin strips. Slice onion and chives.
Step 4
4) Stir-fry the veggies separately. Make sure to wipe the pan with a tissue after each session to avoid mixing the flavors.
Step 5
5) Bring water to a boil and put in the spinach leaves-Cook for 15 seconds. Remove leaves from boiling water and transfer them to a bowl of ice water. Drain and squeeze any remaining water out with your hands. Transfer the spinach to a bowl and add a dash of salt.
Step 6
6) Bring water to a boil and add 5 tbsp soy sauce, 2 tbsp sesame oil, and 2 tbsp sugar. Add the glass noodles and reduce the water until evaporated. Make sure to make a noodle taste check at a time. It should feel slightly overcooked.
Step 7
7) Mix the noodles, the veggies, and the meat in a large bowl. Make a taste test and add soy sauce to your liking. Sprinkle some sesame seeds and serve with rice and kimchi. Enjoy! 🥰
