Ingredients
6 servings
Corn & Black Bean Salsa

1 cupyellow corn
strained & rinsed

1 cupblack beans
strained & rinsed

0.5Red Onion
Finely Diced

1jalapeno
finely diced, optionally remove seeds

⅕ cuptomatoes
finely diced

½ cupcilantro
freshly chopped

2 Tbspgarlic
minced

1lime juiced

salt
to taste
Chipotle Sauce
Instructions
Step 1
Combine all the ingredients for the corn and black bean salsa and place in the fridge until ready to serve.
Step 2
Combine all the ingredients for the Chipotle sauce and place in the Fridge until ready to serve.
Step 3
Add steak to a bowl. Coat with olive oil or avocado oil and season heavily with Chipotle or southwest seasoning and other seasonings. Toss until mixed well.
Step 4
Cook Rice according to pack directions
Step 5
Cook steak skillet over medium high for 6-8 minutes or until desired doneness.
Step 6
Place Rice, Salsa and Steak on a plate and drizzle with the Chipotle Sauce.
