Instructions
Grilled eggplant
Step 1
Halve the eggplants and cut off the stalk.
Step 2
Cut a lattice pattern into the eggplants without cutting all the way through.
Step 3
Place the eggplants on a baking tray and drizzle evenly with the olive oil.
Step 4
Now season with salt, pepper and oregano.
Step 5
Bake the eggplants in the oven at 220 degrees top/bottom heat for approx. 40 mins.
Dip
Step 6
Toast the pine nuts in a pan until golden brown.
Step 7
Place all the ingredients in a blender and blend until a creamy, homogeneous mixture is formed. The dip is ready to enjoy!
