Instructions

Step 1
cook chicken by frying or boiling, add onion and pepperonis
Step 2
add taco seasoning (1 t chili flakes, 1 t cumin, 1 t paprika, 1 t garlic powder, salt and pepper)
Step 3
combine 1 cup creme with 2 cups ricotta salt and pepper
Step 4
for enchilada sauce, fry in hot oil the following dry spices: 2 T flour, 1 t cumin, 1 t garlic powder, 1 t oregano, pinch cinnamon, 1 t chili powder, salt and pepper. Add 1 T tomato paste and 1 cup chicken stock. Allow to cook 10 mins, add a splash of vinegar
Step 5
heat the tortillas, divide the chicken mix and ricotta mix with a fistful of grated cheese. lay them in an oven-proof dish and pour the sauce over. Bake in the oven 180 degrees for 30 minutes. Serve with green salad
