Ingredients

For the Dressing
2 teaspoonsjalapeno pepper
seeded and minced
1clove garlic
¾ teaspoonfresh ginger
minced
⅓ cuplime juice
¼ cupcilantro leaves
packed
2 tablespoonshoney
2 teaspoonsbalsamic vinegar
½ teaspoonsalt
or to taste
⅓ cupextra-virgin olive oil
For Salad
1 poundflat-iron steak
salt
to taste
black pepper
to taste
1 cupcorn kernels
at room temperature, or kernels from 1 ear of grilled fresh corn
1 cupyellow bell pepper
chopped, or orange
½ cupred onion
thinly sliced
1plum tomato
diced
0.5jalapeno pepper
thinly sliced, optional
8 cupsromaine lettuce
torn
½ cupcrumbled feta cheese
tortilla chips
for garnish
Instructions
Make Dressing
Step 1
1. Blend jalapenos, garlic, and ginger in a blender until finely chopped. Add lime juice, cilantro, honey, balsamic, and salt. Pulse to blend. With blender still running, drizzle in oil until well incorporated.
Make Salad
Step 2
2. Preheat oven broiler. Season steak with salt and black pepper, then transfer to a foil-lined baking sheet Broil 4 inches from the heat until an instant-read thermometer inserted in center registers 135F for medium rare, 3 to 4 minutes per side. Let rest for 10 minutes, then thinly sliced against the grain.
Step 3
3. Stir together corn, bell pepper, red onion, tomato, jalapeno (if using) in a bowl. Divide lettuce among 4 plates, drizzle each with about 2 tablespoons dressing. Top with steak, then with corn mixture. Sprinkle with Feta and garnish with chips.
