Ingredients
4 servings
2chicken breasts
cut in half lengthwise
1 teaspoonsalt
½ teaspoonpaprika
½ teaspoongarlic powder
½ teaspoononion powder
½ teaspoonblack pepper
½ teaspoonthyme
½ teaspoonoregano
¼ teaspooncayenne pepper
3 tablespoonsolive oil
1 tablespoonbutter
1onion
medium size, chopped
4cloves garlic
minced
1 cupsun dried tomatoes
chopped
1 cupchicken broth
1 cupheavy cream
½ teaspoonpaprika
for the sauce
½ teaspoonchili flakes
for the sauce
½ teaspoonItalian seasoning
for the sauce
1 cupgrated parmesan cheese
8 ozspinach
Parmesan cheese
for grating on top when serving
Instructions
Step 1
1. Cut each chicken breast in half horizontally.
Step 2
2. In a small bowl mix together the spices for the chicken, 1 teaspoon salt, 1/2 teaspoon of each paprika, garlic powder, onion powder, black pepper, thyme, oregano and 1/4 teaspoon of cayenne pepper.
Step 3
3. Season the chicken with the spice mixture on both sides.
Step 4
4. Put a large skillet on medium-high heat, add in oil and butter. Add in the chicken and cook for about 4 minutes per side or until golden on both sides. Remove chicken from skillet and Transfer to a plate.
Step 5
5. Add the onion and garlic to the same skillet and cook until fragrant, about 1 minute. Stir in the sun dried tomatoes and cook for another minute.
Step 6
6. Pour in the chicken broth, heavy cream and season with 1/2 teaspoon of paprika, Italian seasoning, chili flakes and give it a quick stir. Add in the crated Parmesan cheese and stir again until fully incorporated.
Step 7
7. Add in spinach and cook until the spinach wilts. Reduce the heat to medium-low, Return the cooked chicken back to the skillet. Nestle the chicken in the sauce. Cook until the sauce thickens and thoroughly coats the chicken (about 5 minutes).
Step 8
8. Sprinkle with grated Parmesan cheese, serve and enjoy!
