Instructions
Step 1
Plug in your waffle iron to get it nice and hot for your waffle batter.
Step 2
Separate the egg whites from the yolk and set the egg whites aside.
Step 3
In a medium bowl, whisk together the egg yolk, yogurt, stevia, milk and vanilla extract until well combined. Sift in the flour, salt and baking powder and mix again until well combined. Set aside.
Step 4
In a separate medium bowl, whisk the egg whites till stiff peaks form.
Step 5
Gently fold the whipped egg whites into the batter until it is completely mixed into the batter.
Step 6
Pour the batter into your waffle iron and cook according to the manufacturer's instructions.
Step 7
Serve the waffles with maple syrup and butter or some fresh berries and enjoy!
