Beef broccoli noodle
This is easily my most recreated dish of the year so far and with good reason! The perfect mid-week dinner. Crispy pork and beef noodle stir fry. Cheap, easy, delicious, freezer friendly and great for your weekly meal prep.
Ingredients for 4:
1 tablespoon sesame oil
1 brown onion, finely diced
Salt
1 teaspoon white pepper
500g pork and beef mince
1 1/2 teaspoon ginger, finely diced
1 red chilli, finely diced
3 garlic cloves, finely diced
1/3 cup hoisin
2 tablespoon soy sauce
60 g fresh spinach
Broccolini
220-440g noodles of choice (I used egg noodles)
I only used 220g of noodles because there’s 2 of us but feel free to bulk this meal out further with the other half of the noodles.
To finish:
Drizzle of sesame oil
Sesame seeds
Method:
1. Prep your aromatics.
2. In a wok on high heat with sesame oil, saute the onions until translucent with salt and white pepper.
3. Once slightly softened, add the mince and allow to brown.
4. Add the ginger and chilli and cook for 1-2 minutes.
5. Add the garlic, hoisin and soy and allow the mince to cook for at least 10-15 minutes or until crispy, like borderline burnt. Trust me, it adds a different complexity and texture to the dish.
6. Lower the heat, add the broccolini and spinach (or any veggies of your choice) cover and cook until fork tender.
7. Add the noodles and cook per packet instructions.
8. Finish the stir fry with a drizzle of sesame oil and sesame seeds and enjoy!
