Instructions
Step 1
In a pan add 2 tbsp oil and add 1/2 tsp mustard seeds and let it splutter
Step 2
To this add 1 finely chopped onions and cook until it turns translucent.
Step 3
Now add the 2 finely chopped tomatoes and cook it until it turns mushy.
Step 4
To this add the 2 chopped drumsticks and 2 diced Brinjal and cook it for 2-3 minutes.
Step 5
Now to this add 1/4 tsp turmeric powder, salt as per your taste and 2 tbsp Kulambu Chilli Powder. Mix it well and Cook for another 3-4 mins.
Step 6
Now add little water to it and cook on low flame until oil starts to ooze out from the sides.
Step 7
Once the oil oozes out from sides, add curry leaves and turn off the flame. Now serve the thokku with hot rice.
