Instructions

Prepare the kale and sausages

Preheat a large pan over low heat and add 2 teaspoons of the oil

Saute the garlic cloves until lightly browned, only a minute or so, then transfer garlic to a plate

Turn up the heat to medium. Saute the onion in another 2 teaspoons of oil, along with a pinch of salt. When translucent, after about 3 minutes, add the sausages and remaining 2 teaspoons of oil. Lightly brown the sausages, about 4 minutes.

Now add the kale and remaining 1/4 teaspoon salt. It won't fit in one shot, so add large handfuls of kale along with splashes of water, and toss to cook it down for a minute or so, then add the next batch. This should only take two or three batches, so about 5 minutes total. Mix the garlic back in. Taste for salt.

Prepare the sauce

Step 5
While the kale is cooking, simply add all of the sauce ingredients to a blender and puree until completely smooth. This can take anywhere from 1 to 5 minutes depending on the strength of your machine. Scrape down the sides with a rubber spatula to make sure you get everything. Taste for salt and lemoniness. Keep refrigerated until ready to serve. It does thicken as it chills, so thin out with a little water if necessary.

To assemble

Step 6
Scoop the rice into bowls. Arrange the kale and sausages over the rice. Drizzle with a generous amount of the sauce. Top with olives, thyme, and red pepper flakes, and serve.
