Step 1
Preheat the oven to 325°F. Line a 9 × 9-inch baking pan with parchment paper.
Step 2
In a large bowl, whisk together the pea protein, coconut flour, sweetener, oat flour, flaxseed meal, pumpkin pie spice, mace, baking soda, and salt. Add the milk and pumpkin puree and mix until completely blended (it will be like a moist dough).
Step 3
Spread into the prepared pan, smoothing the top. Transfer to the oven and bake until the edges begin to brown and the top appears dry, 30 to 35 minutes.
Step 4
Remove from the oven and cool completely in the pan on a wire rack, then refrigerate until cold. Remove from the refrigerator and lift the parchment to remove from the pan. Cut into 16 squares.
