Instructions

Step 1
Cook the rice and allow it to cool completely, or use leftover rice for the best texture.
Step 2
Heat one tablespoon of olive oil in a large wok or frying pan over medium-high heat, then add the pork mince and stir-fry until browned and cooked through.

Stir in the crushed garlic, chopped spring onions, and grated carrot, cooking for a few minutes until fragrant and the vegetables soften.

Add the frozen peas and cook until heated through, then sprinkle in a pinch of turmeric powder for color and flavor.

Next, add the cooked rice to the pan, pour in the soy sauce and sesame oil, and toss everything together until the rice is evenly coated and heated.
Step 6
Push the rice mixture to one side of the pan, pour in the lightly beaten eggs, and scramble them until just set before mixing them through the rice.
Step 7
Taste and adjust the seasoning if needed, then serve hot, optionally garnished with extra spring onions or chili.
