All Purpose Supergreen Sauce

One sauce with endless possibilities! Never let greens rot in your fridge again. Easy, blend-able, dip-able, pasta-ble, whateverable. My go-to when I don't know what to eat, I just mix this sauce with any grain, add veg, protein (or not), and the meal is done. This time I mixed it with pasta for an easy weeknight meal.

Step 1
Heat ghee (or neutral oil, butter) in a pan over medium heat and add onion.
Step 2
Fry onion until slightly translucent and fragrant, add garlic, fennel seed, crushed red pepper flakes and fry until garlic is lightly golden brown.
Step 3
Add kale and fry until wilted.
Step 4
Let cool slightly and then add to blender or food processor and add remaining ingredients. Blitz together until smooth. Scrape down the sides a few times, adding water if you feel its needed, and run the blender or food processor again til you reach your desired consistency. Should be thick, as it can be watered down with other ingredients when you use it in cooking. Store in the fridge for up to a week.
