Ingredients
6 servings
2 cupsflour
¼ cupsugar
4 teaspoonsbaking powder
¼ teaspoonbaking soda
½ teaspoonsalt
1 ½ cupsmilk
buttermilk if you have it, regular milk is fine if you don’t, but add your lemon juice to regular milk create buttermilk, plus 1/4 extra milk if mixture is too thick upon combining all ingredients
¼ cupbutter
melted
2 teaspoonsvanilla extract
1egg
large
Lemon juice
to make buttermilk if you don’t have any on hand
mayonnaise
Shortening
or butter, for greasing pan
Instructions
Step 1
Begin by adding your lemon juice to your milk and let it sit for 5 mins (this is to make buttermilk, skip this step if using buttermilk)
Step 2
Combine all dry ingredients in a bowl
Step 3
Melt butter, then add it, and all wet ingredients with the milk in a separate bowl
Step 4
Pour wet ingredients mixture into dry ingredients, pouring slowly and whisking until just mixed and it’s no longer clumpy
Step 5
Mix in a spoonful of mayonnaise (this will make them even fluffier) (I promise it won’t make them taste weird!)
Step 6
Pour batter onto griddle greased with either butter or shortening and cook at 350 degrees until you see bubble form, flip and cook the other side til done.
