Instructions
Step 1
Wash beets and rub skin with coconut oil. Roast in oven until tender.
Step 2
Zest and segment the orange. Add the zest to the salad. Along with the sliced onion, spices, and herbs.
Step 3
Peel and slice beets once cooked and dice them into the salad.
Step 4
Taste and season salad as needed. Top with feta and serve warm or chilled.
