3.5bananas
ripe medium to large

½ cupmaple syrup

3 tablespoonsavocado oil
canola oil, or melted coconut oil

1 ½ teaspoonsvanilla extract

1 ½ cupswhole wheat pastry flour
or all-purpose flour

1 ½ teaspoonsbaking soda

¼ teaspoonsea salt

1 teaspooncinnamon

¼ teaspoonnutmeg

Optional, pecans, or a mix of your favorite nuts

¼ cupvegan chocolate chips

Instructions
Step 1
Preheat your oven to 350°F (175°C) and grease a 9x5 loaf pan.


Step 2

In a large bowl, mash the bananas. Add maple syrup, oil, and vanilla extract, stirring until combined.





Step 3

Sift in the flour, baking soda, salt, and cinnamon (plus nutmeg if using) to the wet mixture. Stir until just combined, avoiding over-mixing to prevent a dry bread.






Step 4

Fold in nuts and/or chocolate chips if desired.



Step 5

Pour the batter into the prepared loaf pan, smoothing the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.


Step 6

Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Step 7

Enjoy the bread warm, as is, or with a spread of vegan butter or peanut butter.
