Sausage black bean quesadillas
Makes 9 quesadillas, which was enough to fill four of us (kids ate 1 each, I ate 2 1/2, Mikki ate 4 1/2). Everyone loved them.

Instructions
Step 1
Put 1-2 Tbsp veg oil in largest skillet on medium.
Step 2
Place 3 corn tortillas in the pan, not overlapping.
Step 3
Top each tortilla with a little cheese, some sausage, more cheese, and another tortilla.
Step 4
When bottom is browned and cheese is fully melted, flip each tortilla to brown the other side.
Step 5
Remove to plate and repeat for two more batches.
Step 6
Cut in quarters with a pizza cutter and serve with sauces/dips/toppings.
