Taco Mixture
Instructions
Step 1
Begin by dicing bell peppers and onions, and cooking on a pan over medium heat until they are softened, usually takes ~10 minutes. Start boiling salted water.
Step 2
When the veggies are almost finished cooking, add pasta to boiling water.
Step 3
Remove veggies from pan and start cooking beef over medium-high heat. Once nearly fully cooked, add taco seasoning, chili powder, garlic powder, a splash of water, and red enchilada sauce. Mix in the pepper and onion mixture.
Step 4
Mix the cooked pasta and beef mixture together.
Step 5
In a blender, add cottage cheese, cheddar powder, velveeta shreds OR low-fat cheddar cheese, nutritional yeast, and a splash of milk. Blend for 60-90 seconds to create a creamy cheese sauce.
Step 6
Mix cheese sauce with pasta and beef mixture, and enjoy!
