Ingredients

1 lbshrimp
cooked cocktail, peeled and deveined

2 tablespoonsextra-virgin olive oil

1red onion
small, finely chopped

2garlic cloves
minced

1 x 14.5 ozcan diced tomatoes

¼ cupdry white wine
optional

1 teaspoondried oregano

¼ teaspoonred pepper flakes
optional

2 tablespoonsfresh parsley
chopped

salt
to taste

Instructions
Prepare the Sauce:
Step 1
In a large skillet, heat the olive oil over medium heat. Add the red onion and garlic, and sauté until softened, about 3-4 minutes.
Step 2
Add the diced tomatoes (with their juice) and white wine, if using. Bring to a simmer and cook for about 5 minutes, allowing the sauce to thicken slightly.
Add the Shrimp and Seasonings:

Stir in the cooked shrimp, oregano, and red pepper flakes, if using. Cook for another 3-4 minutes, or until the shrimp are heated through and the flavors are well combined.
Finish the Dish:
Step 4
Remove from heat and garnish with fresh parsley. Season with salt and pepper to taste.
Serve
Step 5
Serve the Shrimp Saganaki hot, with lemon wedges on the side for squeezing over the top.
