Instructions

Step 1
Season the salmon fillets with salt and pepper on both sides.
Step 2
In a large skillet over medium heat, heat the olive oil.

Add the salmon fillets and cook for 4-5 minutes on each side, until golden and cooked through. Remove salmon from the skillet and set aside.

In the same skillet, melt the butter and add the minced garlic and chopped onion. Sauté until fragrant and onions are translucent.

Pour in the heavy cream and chicken broth, stirring well to combine.

Bring the mixture to a simmer and cook for 3-4 minutes until the sauce starts to thicken.

Stir in the grated Parmesan cheese until melted and the sauce is creamy.

Add the chopped spinach and sun-dried tomatoes, cooking until the spinach wilts.
Step 9
Return the salmon fillets to the skillet and spoon the sauce over the top.
Step 10
Simmer for an additional 2-3 minutes to heat through, then serve.
