Instructions
Step 1
Heat olive oil in a large skillet over medium heat. Brown pork loin pieces on all sides. Season with some salt and pepper.






Step 2
Stir in minced garlic and cook for about a minute. Add chopped sun-dried tomatoes. Season with cajun seasoning.



Step 3
Pour chicken broth into the skillet, add penne pasta, and bring to a boil. Reduce heat, cover, and simmer until pasta is cooked al dente.


Step 4
Stir in cream cheese and Parmesan cheese until melted and creamy.


Step 5
Add spinach to the skillet and cook until wilted. Season with more salt and pepper to taste.

Step 6
Serve immediately with additional Parmesan cheese if desired.
