Chicken and Pancetta pasta

Would be good with some nandos peri peri sauce instead of chilli flakes

Instructions

Step 1
Add the olive oil to the pan add chicken and season with Italian herbs and paprika on both sides. Cook until just done.
Step 2
Meanwhile chop the vegetables and finely chop or mince the garlic.
Step 3
Remove chicken from the pan and add a bit more oil and the pancetta. Cook until crispy
Step 4
Remove pancetta from pan and add onions and garlic. Let them cook until fragrant then add vegetables
Step 5
Fry until starting to soften then add pesto and chilli flakes then finish cooking
Step 6
Add stock cube to boiling water and cook the bow pasta until done. Save a little cooking liquid in the pasta and add butter once drained.
Step 7
Add chicken and pancetta back to pan to warm on low heat.
Step 8
Serve mixed together
