Chris's Potato Pancakes
Chris made these and they were really good! Writing it here in case I want to make them 😂 Makes about 6 pancakes.

Instructions
Step 1
Preheat skillet on stove top, preferably a cast iron one.
Step 2
Shred the potatoes and squeeze the water out
Step 3
Add the eggs, breadcrumbs, cheese, salt, and garlic powder. Mix together.
Step 4
Drizzle olive oil in the skillet. Scoop mixture into skillet (whatever size you want).
Step 5
Flatten the scoop into a pancake shape. Wait a couple minutes to flip. Both sides should be crispy.
Step 6
Enjoy!
