Step 1
Heat the oil in a large saucepan and fry the onion over a low heat for 4 -5 mins until golden brown. Stir in the spices and cook for 1-2 minutes, then add the rice and water. Stir, cover and bring to simmering point. Simmer for 25 - 30 minutes until the rice is tender.
Step 2
Shell the eggs and slice. Skin and flake the mackerel fillets.
Step 3
In the last few minutes of rice cooking time, add the mackerel and stir into the mixture to heat it thoroughly. Season to taste and served garnished with egg and plenty of parsley
