Ingredients
5 servings
½ Tbsextra virgin olive oil
4cloves garlic
minced
1brown onion
diced
1red capsicum
diced
500gextra lean beef mince
1 cankidney beans
or black, drained and rinsed
1 packettaco seasoning
1 cuptomatoes
canned, or Mexican salsa
1 cuprice
uncooked
3 cupsbeef stock
To serve
Instructions
Step 1
Heat the olive oil in a fry pan over medium heat, add the onion & garlic and sauté for 2-3 minutes until softened.
Step 2
Add the beef mince, capsicum, beans, taco seasoning, canned tomatoes, rice and stock to the pan. Mix well then bring to a boil & simmer for 20 minutes.
Step 3
Sprinkle the cheese over the beef mixture and cover with a lid until the cheese melts.
Step 4
Serve with lettuce, corn chips, avocado, greek yoghurt and a squeeze of lime.
